In 1842, Ibai Castiñeiras' great-great-grandfather started selling churros at a fair in Pontecesures. 181 years later, Ibai continues the family tradition by opening a permanent churro shop on Caldeirería street in Santiago de Compostela, which celebrates its first anniversary tomorrow, Thursday, April 11.
Taking into account the change in habits and the complex itinerant life, Ibai decided to establish itself permanently in a place decorated as a traditional fair, thus maintaining the original spirit of the churrería. The new churrería, called La Quinta in honor of the fifth generation of churreros, celebrates its first anniversary this Thursday. The young entrepreneur will celebrate it with a day of solidarity where the proceeds from all the churros sold throughout the day will go to the Association of Oncological Children of Galicia - ASANOG.
The opening of La Quinta represents an evolution of the family legacy where they offer the customer, both locals and visitors and tourists a wide variety of churros, from the most traditional accompanied by a chocolate to the most innovative with fillings of all kinds. Ibai confesses that the churros that are currently having the most pull are the ones covered with kinder or nutella.
Ibai also takes a position on one of the eternal culinary debates, choosing churros for breakfast or snack, almost always accompanied by a chocolate. He assures that the population is very divided, although it is true that the local customer usually prefers to enjoy it in the afternoon, but we have customers who are faithful to their breakfast with two or three churros.
With only 25 years old, Ibai takes on the challenge of keeping the family tradition alive in a modern context, demonstrating his commitment to quality and authenticity in the preparation of churros. The opening of La Quinta marks a milestone in the history of the Castiñeiras family, consolidating its legacy in the gastronomy of Compostela and offering a unique experience to customers who visit the restaurant open 365 days a year, in summer from 08.00 to 22.00 hours.
